Despite initial hurdles, Thai food quickly gained popularity, prompting the family to expand their reach with additional locations in **Shellharbour** and **Thirroul**. “Thai Carnation was a revelation for many locals,” said Sukapojana, recalling how it introduced a flavor explosion that changed dining experiences in the area.

Today, Wollongong boasts a thriving culinary scene featuring numerous Thai restaurants that no longer dilute their offerings to suit local tastes. With innovations like robotic servers at Jasmine Rice, the dining experience has reached new heights, showcasing the fusion of tradition and modernity.
