Homegrown Tap & Dough will officially open its doors in Castle Rock on December 26, 2025. This new location, situated at the corner of Third & Wilcox, represents the sixth establishment for Homegrown and the fifteenth for the Gastamo Group, the Denver-based hospitality team renowned for its other ventures, including Perdida and Park Burger. The restaurant aims to serve as a neighborhood gathering place for families, friends, and visitors in the area.
A grand opening celebration is scheduled for January 6, 2026, featuring a ribbon-cutting ceremony in partnership with the Castle Rock Chamber of Commerce at 10:00 a.m. This event will mark the beginning of a month-long initiative designed to give back to the community. From January 5 through January 31, 2026, the restaurant will donate $1 from each pizza sold to the Help & Hope Center, a local nonprofit focused on providing food assistance and crisis support to Castle Rock families.

Homegrown Tap & Dough specializes in approachable Italian cuisine, featuring hand-tossed pizzas, quality pasta dishes, and a variety of shareable starters. The restaurant’s beverage menu includes a selection of Colorado craft beers and hand-crafted cocktails. The Castle Rock location boasts a unique “elevated ranch” design, incorporating rustic wood finishes and Western details to reflect the town’s heritage while maintaining a warm, communal atmosphere.
The 6,020-square-foot restaurant will accommodate 226 indoor guests and has a 35-seat corner patio. The design includes garage doors that open to connect the dining area with the vibrant energy of Downtown Castle Rock. For special occasions, guests can reserve private and semi-private dining spaces. One of the semi-private rooms features a custom reeded kitchen window, offering patrons a glimpse into the kitchen while ensuring an intimate dining experience.
Local artistry and craftsmanship are highlighted throughout the restaurant. A custom elk head, created by artist Dolan Geiman, along with locally sourced millwork and a curated vintage arcade from Chattanooga Pinball, provide a playful atmosphere. The menu will include crowd-pleasing options like Spinach & Artichoke Dip, Pepperoni Rolls, and a variety of pizzas, pasta, burgers, and protein-forward bowls, catering to diverse dietary preferences with gluten-free and vegetarian options.
Community engagement is central to the values of the Gastamo Group. Their civic initiatives include founding the Denver Deluxe Music & Art Festival and providing over 250,000 meals to healthcare workers during the COVID-19 pandemic. The Castle Rock restaurant was developed with the help of numerous local vendors and artists, and it has created more than 65 local jobs.
