Crust Pizza is set to open a new restaurant in Katy, located at 29615 Jordan Crossing Blvd, Suite 250. This expansion is spearheaded by franchisee Trang Do and her partner, Vu Dau, who are excited to introduce the popular brand to the local community. Dau, who is overseeing the construction of the Katy restaurant, expressed his enthusiasm for the brand. “I built a few of their locations, I really liked the food and the ambiance, so we decided to franchise,” he stated. This initial location is part of a multi-unit agreement, with a second restaurant already planned for Fulshear. That site is currently under development, with an estimated opening timeframe of one to one and a half years.
The Katy restaurant will feature a comprehensive interior build-out. Permits indicate that the project will include new gypsum board partitions, a refreshed dining area, a designated food line, a fully equipped kitchen, updated ceilings, and restrooms. Furthermore, there will be mechanical upgrades, including new air conditioning ducts and lighting. The completed restaurant aims to provide a modern and inviting atmosphere for families and pizza enthusiasts alike.
This venture holds personal significance for Dau, as he is partnering with his girlfriend for the franchise. In addition to managing the construction, he plans to be actively involved in the day-to-day operations once the restaurant opens. If the timeline remains on track, the Katy location is expected to debut in late January 2026.
