SoDough Square Pizza, founded by entrepreneur Robert Blair, is set to bring its distinctive Detroit-style pizza to St. Petersburg, Florida. Known for its iconic square pizzas, the chain currently operates three locations in Orlando and Winter Park. The new St. Petersburg outlet will be located at 6925 Fourth St N, as indicated in recently submitted planning documents.
The menu at SoDough Square features a variety of innovative pizzas, including the Detroit Rob City, which boasts a combination of Detroit red sauce, pinched sausage, Ezzo cup pepperoni, whipped ricotta, hot honey, and fresh basil. Another popular option is the Woodward White, made with Alfredo sauce, a blend of brick cheese, red onion, diced tomato, pecorino Romano, and fresh basil. A unique offering, the P.B.J. pizza, consists of pineapple, bacon, and jalapeno, topped with Alfredo sauce and green onion.
SoDough Square emphasizes its commitment to quality by baking pizzas in traditional blue steel pans sourced directly from Michigan. According to the restaurant’s website, these pans impart essential characteristics to the pizza. Each ingredient is crafted in-house, including the signature Stanislaus tomato sauce and a proprietary brick cheese blend, specifically shredded for their pizzas. The highlight of their offering is the high-hydration, authentic Detroit dough, which is celebrated for its “frico,” or caramelized cheese crust, that defines the pizza’s flavor and style.
Blair has previously launched successful culinary ventures such as Gringos Locos and Tin & Taco, establishing a track record of innovative dining experiences. While he was unavailable for comment regarding the St. Petersburg opening, the anticipation for SoDough Square’s arrival in the Tampa Bay area is palpable among local food enthusiasts.
For those eager to stay updated on SoDough Square’s developments, the restaurant encourages followers to keep an eye on their Instagram account, @sodoughsquare.
