URGENT UPDATE: The historic Moruya Waterfront Hotel is set for a major transformation under new publican Ben Ryan, who just took over management from long-time owners Linda and Mark Ethell. This change comes after 11 years of ownership by the Ethells, marking a new chapter for the iconic venue on the northern bank of the Moruya River.
Ryan, who brings a wealth of experience from running pubs across Muswellbrook, Hunter Valley, Singleton, Armidale, and Goulburn, is determined to restore the hotel to its traditional pub roots. “I think most pubs should operate on the core traditional day-to-day principles of a pub,” Ryan stated. “It doesn’t have to be whiz-bang.”
One of Ryan’s first major changes will be the removal of the controversial tent in the beer garden, which he referred to as “a bit much.” He humorously suggested, “Unless we’re going to evolve ourselves into a sort of a part-time circus, we could have someone with a top hat and a whip hanging around out there.” This decision is expected to reshape the outdoor space into a more inviting atmosphere.
In terms of offerings, Ryan plans to introduce a new wine list and refreshing cocktails, alongside a rotating selection of ales. “I’d like to have a couple of floating taps where they sort of roll them around a bit,” he shared, aiming to enhance the drinking experience for locals and visitors alike.
Ryan will also retain Sam Cray as chef, who is already preparing to launch a new menu for the summer. “I just want a steak. I don’t want to have it drizzled with this or infused with that,” Ryan emphasized the need for a straightforward dining experience that prioritizes simplicity and quality.
The Moruya Waterfront Hotel has stood as a local landmark for 180 years, evolving from a sly grog joint to its current form. Ryan’s commitment to preserving the essence of this beloved establishment while refreshing its offerings is igniting excitement among the community.
