SkyBeach Resort, an updated Gulf-front destination on the southern tip of St. Petersburg, Florida, has introduced a new culinary experience with the opening of LUMA on January 22. This Mediterranean-inspired restaurant, which overlooks the resort’s recently renovated marina, aims to offer diners a fresh take on local flavors through a menu crafted from seasonal ingredients.
LUMA is designed to foster social connections, inviting guests to gather and celebrate over meticulously prepared dishes in an inviting atmosphere. The name LUMA, derived from the Latin word “lumen” meaning light, reflects both the vibrant Mediterranean spirit and the picturesque surroundings of St. Petersburg. The restaurant’s design features midcentury-modern influences complemented by a soothing palette of gold and blue, along with coastal decor elements like rattan accents woven into light fixtures and seating.
Allie Singer, Vice President of Commercial Strategy and Asset Management at Willner Realty & Development Co. (WRDC), the resort’s ownership group, expressed pride in the new addition. “We’re proud to continue elevating the guest experience at SkyBeach Resort with the addition of LUMA,” Singer stated. “This concept completes our food and beverage vision in a meaningful way—one that resonates with both our guests and the local community.”
At the helm of LUMA is Executive Chef Ryan VanDusen, a Michigan native with over two decades of culinary experience in notable markets like Chicago and Florida. His previous roles include leadership positions at well-regarded establishments such as Soho House Chicago and the iconic Don CeSar hotel. “This concept reflects a deep commitment to craft and place,” VanDusen noted. “The menu honors Mediterranean classics while embracing Gulf Coast influences, resulting in a seasonal approach that captures the flavors and energy of Florida.”
The menu begins with an extensive mezze selection featuring the signature Tear + Share. Diners can choose from house-made lavash, grilled naan, market crudités, and pita, complemented by spreads like garlic hummus, smoky baba ghanoush, and golden whipped feta. Other small plates include Gambas al Ajillo with Key West pink shrimp and Florida Gulf Ceviche, which showcases local fish with serrano pepper and passion fruit. A highlight is the Halloumi Esh, presented tableside with flaming Halloumi cheese finished with Arak.
From the “Garden & Grove” section, the menu offers vegetable-centric dishes such as Charred Baby Carrots with grapefruit and hazelnuts, and Watermelon + Feta, which features arugula and a bright citrus vinaigrette. Chef VanDusen emphasizes the importance of showcasing produce, treating seasonal vegetables as key ingredients that can stand out on their own.
Entrées in the “Feast” section feature bold flavors and Mediterranean comfort dishes. Notable selections include Mediterranean Roasted Whole Fish served with new potatoes and olive-artichoke salad, Four-Hour Slow-Braised Short Rib Kebab with guava barbecue sauce, and Lamb ‘Over Fire’ Skewers topped with zhoug and whipped goat cheese.
LUMA’s cocktail program mirrors the restaurant’s culinary philosophy, utilizing Mediterranean herbs and fresh ingredients. Signature cocktails include the Golden Empress with Empress 1908 Gin and Moroccan mint tea, Santa Sol with Santa Familia Cristalino tequila, and the adventurous Sundrift, a THC-infused cocktail featuring strawberry and lavender syrup.
To enhance the dining experience, LUMA features live music with a DJ every Friday from 21:00 to 23:00, creating a lively atmosphere for guests. Additionally, the restaurant offers a dock-and-dine service, allowing visitors to arrive by boat and enjoy a scenic dining option on the Gulf.
The opening of LUMA marks the third culinary concept introduced at SkyBeach Resort since its relaunch in July 2024. This follows the introduction of SkyBar + Grille, a two-story open-air restaurant and bar, and Paradeco Coffee Roasters, the second location of a beloved downtown St. Petersburg café. The resort has undergone a comprehensive transformation, now featuring redesigned guest rooms, an updated lobby, and a 6,260-square-foot event center, all aimed at enhancing the guest experience.
