Sydney Chef’s New Melbourne Restaurant Shines with Local Flair

The recent opening of From Here By Mike at 1 Hotel Melbourne has emerged as a standout in Melbourne’s dining scene, showcasing the culinary talents of renowned Sydney chef Mike McEnearney. Located in the Docklands area, this establishment has quickly garnered attention for its commitment to local produce and sustainability, making it one of the most exciting new openings of the year.

1 Hotel Melbourne, which launched on November 21, 2025, embodies a “sustainable luxury” ethos. The hotel has transformed an old goods shed into a modern dining venue that features elements such as repurposed wharf timbers and bluestone pavers, creating a tactile and inviting atmosphere. Guests are greeted by abundant natural light and thousands of plants, enhancing the overall ambiance.

The restaurant’s design includes a riverside deck and a warm interior with timber and leather accents, contributing to a cozy yet upscale dining experience. The staff, a mix of seasoned professionals and enthusiastic newcomers, add to the welcoming environment, ensuring that each guest feels valued.

Chef Mike McEnearney is no stranger to the culinary world, having previously led the acclaimed Rockpool kitchen and established his own successful restaurants, including Kitchen By Mike and No. 1 Bent Street. His deep connection to Victoria is evident in the menu, which serves as a map of the region’s farmers and suppliers. Each dish is crafted based on seasonal availability, emphasizing a farm-to-table philosophy that prioritizes quality ingredients.

The menu features an array of dishes that highlight the best of local produce. For instance, the puffy, crisp flatbread is topped with almond “ricotta” and complemented by a mushroom XO condiment. Another standout dish includes grilled octopus with smoked mussels served over romesco sauce, delivering an explosion of flavor. A unique offering is the raw marlin, enhanced with blood orange and olives, reflecting McEnearney’s innovative approach.

Vegetables also take center stage, with dishes such as braised and grilled cabbage, which showcases the kitchen’s ability to elevate simple ingredients. For dessert, a honey sponge paired with crème fraîche exemplifies the restaurant’s focus on simplicity and perfection.

The restaurant’s commitment to sustainability extends beyond the menu. The kitchen is currently diverting 87 percent of its waste from landfill, with a target to exceed 90 percent. This rigorous approach to waste management sets a new standard for hotel dining.

From Here By Mike aims not just to attract hotel guests but to establish itself as a destination restaurant in Docklands, a concept that has historically faced challenges in Melbourne. With its vibrant atmosphere and a menu that changes with the seasons, it could very well become a key player in revitalizing the area.

For those interested in drinks, the restaurant’s cocktail menu features unique offerings like the Seafarer’s Martini, infused with saltbush vermouth, and an espresso martini that utilizes coffee run-off from the hotel’s daytime café. The wine list leans towards small Victorian producers while also including selections from further afield.

Dining at From Here By Mike typically costs around $180 for two people, excluding drinks, a reasonable price for the quality and experience offered.

As Melbourne continues to evolve as a culinary hub, 1 Hotel Melbourne and its restaurant are poised to play a significant role in shaping the city’s dining landscape, proving that sustainability and excellence can go hand in hand.
