Australian Macadamias Launches Festive Cherry Cake Recipe Now

Ingredients:
100g caster sugar
4 eggs, separated
125g plain flour
60g melted butter
2 tbsp macadamia pieces
500–600g fresh cherries (or 300–400g frozen), pitted
300ml thickened cream, beaten to firm peaks
3/4 cup whole macadamias (lightly roasted)

Method: Preheat the oven to 180°C. Grease and flour a 20cm cake tin. Beat 80g sugar with egg yolks until thick. In another bowl, beat egg whites to soft peaks, gradually adding the remaining sugar until glossy. Fold the egg whites into the yolk mixture along with the sifted flour, melted butter, and macadamia pieces. Bake for 20–25 minutes or until a skewer comes out clean. Cool completely.

For the cherry compote, combine 1/4 cup water, 1 tbsp cornflour, 2 tbsp caster sugar, and 1 tbsp lemon juice in a saucepan. Bring to a simmer, then add cherries and cook until thickened, about 5–6 minutes. Cool before assembling.

To serve, place the sponge on a plate, layer with whipped cream, spoon over the cherry compote, and scatter with macadamias. Serve with extra cherries and cream on the side for added indulgence.
