UPDATE: Norma Restaurant in Albury has secured its chef hat status for the second consecutive year, marking a significant achievement in the culinary scene. Under the leadership of head chef Tess Rafferty, this neighbourhood eatery continues to shine, making it the only restaurant in Albury to receive this prestigious recognition from the 2026 Good Food Guide Awards.
This week, Matt Carrington, co-owner of Norma, expressed his gratitude towards Rafferty, who joined the team in February 2022 after initially assisting with menu development. “Much of the credit goes to Tess,” Carrington stated following the awards ceremony in Melbourne. “Her influence has been transformative.”
Norma first received its chef hat last spring, a surprise achievement for the team, especially after an invitation to the awards was overlooked. Now, the restaurant is enjoying a surge in popularity, showcasing the best of Italian cuisine in a friendly atmosphere.
Rafferty, who has trained in notable kitchens across Sydney, Berlin, Copenhagen, and Melbourne, reflected on the significance of this achievement. “To be counted among those who received a hat this year is wild to me!” she said, drawing inspiration from renowned chefs in major cities.
Situated on Guinea Street, Norma operates six days a week with a dedicated team of 20 staff. Rafferty emphasized the importance of continually refining their offerings, which has led to a loyal customer base, including patrons who travel from Canberra to dine at the restaurant.
Norma’s success is a tribute to Carrington’s vision, inspired by his grandmother, Norma Carrington. The restaurant, which opened in 2020, aims to serve simple yet exquisite Italian dishes, reflecting the ethos of a genuine neighbourhood eatery.
In addition to Norma, the 2026 Good Food Guide Awards recognized other local establishments, including Grace Bar and Eatery in Rutherglen, which earned its first chef hat, and Provenance in Beechworth, which retained its two-hat rating. Provenance’s executive chef, Michael Ryan, was also a finalist for Chef of the Year, reaffirming the area’s culinary excellence.
As the restaurant industry continues to navigate the aftermath of the pandemic, Norma’s achievement illustrates the resilience and dedication of local chefs.
